Ingredients include 2 tablespoons of olive oil, 4 button mushrooms (sliced), 4 large egg whites, kosher, salt and pepper, 2 scallions (sliced), and an ounce of Cheddar.

To get started, heat a tablespoon of olive oil in a large, nonstick skillet. Add mushrooms and scallions and stir for two to three minutes. Fold it over the filling.
